Pumpkin Cheesecake Hand Pies

When in doubt, bring pie. These warm, flaky hand pies pair Pumpkin Spice muffin mix with a creamy cheesecake center. Featured in our recipe book, they’re made for sharing, with eight little pies in every batch.

Ingredients

For the dough

  • 1 single-serve container Bootylicious Pumpkin Spice mix (use the dry mix)
  • 1 cup almond flour
  • 1 egg
  • ⅓ cup vanilla Greek yogurt
  • 1 tsp vanilla
  • ½ tsp pumpkin pie spice
  • ½ tsp cinnamon

For the filling

  • 8 oz cream cheese
  • ½ cup Greek yogurt
  • 1 tsp vanilla
  • 1 tsp pumpkin pie spice
  • ¼ tsp cinnamon
  • Optional: sweetener

For the egg wash

  • 1 egg
  • 1 tsp water

You’ll need

A mixing bowl, rolling pin, parchment paper, lined baking sheet, and oven.

Directions

  1. Stir together the Pumpkin Spice mix, almond flour, pumpkin pie spice, and cinnamon. Add the egg, vanilla Greek yogurt, and vanilla. Knead for 1–2 minutes until you have a smooth ball.
  2. Chill the dough for 20 minutes. Meanwhile, beat the filling ingredients together until smooth and refrigerate.
  3. Preheat the oven to 350°F. Roll the chilled dough ⅛ inch thick between sheets of parchment. Cut into 4-inch circles or squares.
  4. Whisk the egg and water for the egg wash. Add 1½ Tbsp filling to each pie, brush the edges with egg wash, then top with dough or fold over. Seal and crimp the edges, cut a slit in the top, and brush the tops with egg wash.
  5. Bake for 18–22 minutes, until golden. Cool for 10 minutes before serving. The filling sets as the pies cool.

The trick

Don’t skip the chill. Twenty minutes in the fridge helps the dough roll cleanly and seal without cracks. If the dough is too dry, add a little yogurt. If it’s too sticky, add a little almond flour.

  • Keep leftovers refrigerated. Don’t leave these cheesecake-filled pies out for more than 2 hours.
